Delhi Food Walks

We have come to Samode Palace to be a part of Roshni and Ross's wedding celebration I had first met Roshni and Ross in Old Delhi when they had come for a food walk And whenever they visit Delhi, they always join us for a food walk Now let us start with the high tea On our plate we have samosa, lemon tart, chum chum brownie, sandwich, green pea puff chicken puff, chicken pakoda and cutting tea The concept of high tea is a part of the British food tradition It is like in between lunch and dinner W
hen you have small portions of food along with tea, that is referred to as high tea When this concept had emerged, it was served on a high table to working class people But with the passing of time it has changed In the Indian context, the things that you eat when you feel a little hungry during evening Those things are considered as high tea But they are served in small portions only We are starting with this sandwich, vegetable slaw sandwich There is a sharp and pungent flavour of the mustard
sauce used in this And this is the green peas puff Full on flaky And it has a nice flavour of cumin Chicken pakoda The chicken pieces have been dipped in gram flour batter and then deep fried And chaat masala has been sprinkled on top This is samosa Wow It is a nice peas and potato based samosa In its filling there is whole coriander This is chicken puff This is lemon tart It is very delicious It has a nice sharp lemony taste This is a Bengali sweet It is called chum chum It is basically elongat
ed in shape Here it has been cut into smaller pieces It is made of Indian cottage cheese and on top there is a thin silver sheet It is quite sweet This is brownie It has a fudge like texture Which one do you prefer I am non alcoholic Teetotaler One GNT for me as well This one -Yes Thank You At Samode Palace there is this dining hall named Darbar Hall And the dinner will take place here Presently we are at Sheesh Mahal A cocktail party is going on here I have taken gin and tonic and it is quite w
ell made It is citrusy and refreshing This is betel leaf lamb kebab that has been made with betel leaves And this is chicken satay First I will have this betel leaf lamb kebab It doesn't have a very sharp flavour of the betel leaves Now let's have the chicken Talking about this venue, we can that it is very beautiful And royal too The paintings on the wall are so intricate that you can't take your eyes off from them And the way they have decorated this Darbar Hall makes me feel that we are going
to experience the same grandeur of a royal feast that used to take place here back in time Here we have pan seared chicken, lemon and butter capers Let us take a piece This is cauliflower mornay or baked cauliflower with cheese. How amazing! Mustard mash potato Does this too have cheese in it? -Yes This is a foreign dish So the menu over here comprises of both domestic and international dishes -Yes Grilled vegetable lasagne This is an Italian dish This is multi layered pasta The red colour is d
ue to beetroot And this is laal maans Laal maans one of the authentic Rajasthani dishes This is Delhi's own butter chicken Because it was invented in Delhi Hence it is always referred to as Delhi's butter chicken And here we have kumbh matar rizala or peas with mushroom There are so many dishes over here that this plate won't be able to accommodate them all One need to bring two such plates This is malai kofta All these dishes won't fit in this plate Sir please take this as well The plate should
have been bigger As the appetite is quite big Let's take these remaining ones in the second round What all varieties of breads do we have? There is butter naan, garlic naan, laccha paratha etc. This is garlic naan Let's begin with foreign flavours This is baked cauliflower Absolutely milky and creamy Wow And it is mildly spiced Very tasty This is mashed potatoes This too is buttery This is pan seared chicken Wow It is made with black pepper and red chillies and is quite amazing This is very goo
d food You have North Indian food, Rajasthani food and some foreign dishes as well A mix of everything Loved it. Thank you The one foreign dish that remains to be tried is this lasagna It is very tasty It seems that today I am going to repeat the word 'umda' quite often as the food here is so delicious So these were the foreign dishes Now let's relish our own traditional dishes present on this plate let's start with mushroom and peas Along with it we have this garlic naan This is sweet And it ha
s a rich gravy Now let's move towards the Rajasthani dish lal maans And it is named lal maans because the chillies used in it is the Mathania chillies Mathania is a place near Jodhpur. And the chillies from that place is used in lal maans Those chillies are red in colour hence this dish is named lal maans It is made of goat meat Let's try it The meat is perfectly cooked Neither is it overcooked nor undercooked The desired texture of the meat is there Although it is red in colour but it is not th
at spicy Now is the turn of butter chicken Absolutely tender meat It has a perfect balance of cream and butter And it also has that slight sweetness present in a butter chicken And it is not overly sweet as we get to find in many places The texture is quite creamy
