Green chillies (less spicy & finely chopped) हरी मिर्च 1 small bunch Spinach, roughly chopped, पालक ½ inch Ginger (peeled & chopped) अदरक 2-3 tbsp Water, पानी 1 medium Boiled potato, mashed, आलू 2-3 tbsp fresh Mint leaves, roughly chopped, पुदीना पत्ता 2-3 tbsp fresh Coriander leaves, roughly chopped, धनिया पत्ता ½ cup Water, पानी 2 tsp Prepared Masala, तयार किया हुआ मसाला For Masala 1 heaped tbsp Black peppercorns, काली मिर्च के दाने 1 no. Black cardamom, बड़ी इलायची 5-6 no. Green cardamom, हरी इलायची ¼ inch Mace, जावित्री 3-4 no. Cloves, लौंग ½ tsp Coriander seeds, धनिये के बीज ¼ tsp Cumin seeds, जीरा Salt to taste, नमक स्वादअनुसार For Chutney 2-3 tbsp Oil, तेल 7-8 no. dry Red chillies, सूखी लाल मिर्च 4-5 no. Garlic cloves, sliced, लहसुन ½ cup Roasted chana dal, भुनी हुई चना दाल 1 ½ cups Curd, beaten, दही Salt to taste, नमक स्वादअनुसार For Shallow Frying 2 tbsp Ghee, घी Prepared Kebab, तयार किया हुआ कबाब For Garnish Prepared chutney, तयार की हुई चटनी Green chutney, हरी चटनी A pinch of Degi red chili powder, देगी लाल मिर्च पाउडर Coriander sprig, धनिया पत्ता Lemon wedge, नींबू की फांक Process For Kebab Mixture In a kadai, add ghee, once it's hot, add cumin seeds, asafoetida and let it splutter. Add ginger, carom seeds, fresh green peas, salt to taste and saute it for a minute. Add green chillies, spinach, ginger and cook it for a while. Add water, boiled potato, mint leaves, fresh coriander leaves and cook well. Add water, cover it with a lid and cook it for 5-6 minutes or until cooked well on medium flames. Transfer the mixture to a tray and leave it aside to cool down at room temperature. Transfer it to a mixer grinder jar and grind it into the smooth paste. Add prepared masala and give it a good mix. Take a small portion of mixture and give it a desired shape. Keep it aside for further use. For Masala In a pan, add black peppercorns, black cardamom, green cardamom, mace, cloves, coriander seeds, cumin seeds, salt to taste and dry roast it for a minute on low flame. Transfer it to a mixer grinder jar and grind it into fine powder. Keep it aside for further use. For Chutney In a pan, add oil, once it's hot, add dry red chillies, garlic and saute it until golden brown. Add roasted chana dal and cook it for a while until aromatic. Strain out the excess oil, transfer the prepared mixture to a mixer grinder jar and grind it coarsely. Take a bowlful curd, add prepared chutney mixture, salt to taste and mix it well. Keep it aside for further use. For Shallow Frying In a pan, add ghee, once it's hot, place prepared kebab and shallow fry until crispy on both the sides. Transfer it to the serving dish, garnish it with degi red chili powder, coriander sprig and lemon wedge. Since I'm using fresh green peas, I'll add more water into it. But if the green peas are frozen, then they're already precooked, So add less water into it. Basically, the kabab mixture is almost ready. It's time to prepare the kabab masala. Don't overcook the kabab mixture because it will be get cooked again. Simply add water and let it cook in its own

Grind it as coarse as tea leaves. Mix it with curd and the chutney will be ready! We need to grind 3 mixtures, Masala, Green peas mixture, And chutney. Mix the red chilli and dal mixture with curd to prepare the chutn
ey. Add some salt because I didn't add salt earlier. If the curd is sour enough, do not add lemon juice into it. This coarse powder can be stored as well. The dal, red chillies and garlic won't go stale. If stored in an air tight container, it won't go stale for 15 days. Finely grind the masala. And here's the hara kabab mixture. Sprinkle the prepared masala into the kabab mixture. If the mixture is too watery, The mixture shouldn't be too viscous because we're cooking kababs and not tikkis! But
if the mixture is too watery, Then you can either add cornstarch into it Or you can add gram flour into it! Here you go! Look at its beautiful hue! This is the ideal consistency for the mixture. Don't shape it like a tikki, If you wish, you can cook the kebab mixture as well. This way, the kabab mixture will turn more viscous. Since I do not want to make you work because I'm a good human, That's why, I won't make you do it. I'm using the leftover oil that was used to roast the red chillies. App
