As we await the arrival of Spring in the countryside there's a sense of anticipation in the air. We’re a little over a week away from Spring Equinox also known as Ostara to those who follow The Wheel of the Year Spring Equinox is an official first day of Spring that marks the moment when day and night are equal in length symbolising the perfect balance between light and darkness. Although hints of Spring are everywhere The Winter still holds sway over the English Countryside … but not for much l
onger. I sense the shift in the air, even here, in the windy, lonely Quantock hills, nature is stirring, waking up from Winter slumber. I’ve written in-depth blog post about Spring Equinox / Ostara For those who are interested to learn more, link in the description x I have some pottering around the house to do this afternoon Valentine’s Day flowers need to go to the compost bin and the kitchen needs cleaning… again :) I remember my parents joking that the only things certain in life are death a
nd taxes. I can confidently add cleaning the kitchen to this list :D No matter what, even on the days when you don't cook there will be something to clean in the kitchen ;) Kitchen truly is the heart of the home And even my kitchen is far from ideal (we are still renting) I’m grateful to have it at all. y What story you tell is up to you I choose a peaceful, maybe slightly boring story With a happy ending and no drama I finally started using my recipe notebook This fork that used to belong to my grandma Wladyslawa (Wladzia) This fork is the only piece that was left from her cutlery set It is very dear to me and I always eat using it I’m making a very simple, 4 ingredient cookies for lunch First I mash one banana, the more ripe the better Now I'm adding half a cup of oatmeal Andrei came to make
our lunchtime coffee Continuing with the cookies - next I’m adding 3 tbsp of peanut butter Mix in also a handful of dark chocolate chips And shape little flat discs on the baking paper You can use your fingers to shape them, too Add a few extra chocolate chips on top for decoration Put into the oven for 10-12 minutes, medium heat Little coffee break while cookies are in the oven I will link the cookie recipe in the description box Let cookies cool down and then transfer them to a wire rack to co
